I can't reproduce this.  I just installed Euro Truck Simulator 2 from Steam,
launched the game, and tried changing the graphical
settings...enabling/disabling Sunshafts and Depth of Field...and it worked
fine.  I also tried changing resolution...and that worked fine too.

Can you 'gdb attach' to the game and get a backtrace ('bt') when it crashes?
