Having the keyboard be able to select the enumeration could be very important
for accessibility reasons. It does serve the function of being able to set
properties for the numbering list itself - like size, colour etc.

Ctrl+ already has a global meaning - jump to the next word. (So this is already
a alternative for OP, as that already skips the numbering by definition.) [By
global I mean at an OS level - not even specific to LibreOffice.]

Shift+ already has a global meaning - select. So this is not an option.

I don't know if Alt+ already has any meaning - it doesn't seem to do anything
special when I try it. However, it seems a bit fake to me to "invent" a meaning
for a very specific situation. How would anyone discover that?

I'd call this WONTFIX - given that it is an accessibility concern and a
globally meaningful use of CTRL+ already skips over non-word stuff.
