I forgot to say:

And if the printer expects CMYK, then allow DefaulCMYK or DeviceCMYK
to *be* DeviceCMYK.

So, only force in a cmyk profile when the rendering target is rgb.  *Some*
kind of profile is needed in that case, and a real-world profile would be
better than a simple R=1-C style profile.
