Evince fonts look pretty blurry with anti-aliasing on. I'm not sure if aa or
hinting is doing this too though.

Here's a screenshot of Evince using poppler(cairo) on the right, and chromium
browser on the left. I have anti-aliasing and hinting turned off on my system
but it seems to be ignored by poppler anyway.

It would be good if it would take notice of what I've set for my system. Or
perhaps you can show me how to turn off aa when compiling poppler?
