[poppler] Fix building static libraries with cmake

I have been building static libraries for years because I need only the pdftops executable and I want to avoid the complication of distributing libpoppler.so.

Does using static libraries for poppler actually work?

As far as i remember static linking of libraries means that static objects
defined in C++ dont' get created, so stuff will fail?
