I looked quite carefully at the gnome-vfs sources but was unable to find
the code.

I don't have gtk-update-icon-cache, this is GNOME 2.8/GTK 2.4

We need that too yes but I think allowing ISVs to ship new mimetype
icons is a higher priority.
