Thanks ever so much! It's just a matter of starting uim-xim with the 
right locale!

As a bonus, uim-anthy does indeed support ja_JP.UTF-8 as long as the 
uim-xim program is run in eucJP... I think that's pretty neat.

OK, thanks so much everyone... I'd better get cracking on a new version 
on my Gentoo i18n howto for gaijin then :D
