how to get streaming statistics such as latency, pachekt-loss... and all that may be useful

I have a software written in C++/Qt5/gstreamer that deployed on two computers
they are able to send audio and video in streaming to each other.

Now, I have to get all possible statistics from both pipelines (sender and
receiver).

Such statistics include:
- packet-loss
- latency from src to udpsink
- latency from sender to receiver
- connection speed
- ...

What can I include more in my statistics and how do I get this data?
