Media formats

Hi,

I was looking at the media formats described in -
https://gstreamer.freedesktop.org/documentation/additional/design/mediatype-video-raw.html?gi-language=c#formats 

Some formats have these fields but not all of them. Whats the reason behind
that ? 
    default offset:  0
    default rstride: RU4 (width)
    default size:    rstride (component0) * RU2 (height)

Also some formats have offset and others have it as "default offset". Does
that mean these can be configured while creating the buffer ?
