Disable automount completely in the volume manager:
  Preferences -> Removable Storage

Or look at:
  /usr/share/hal/fdi/90defaultpolicy/storage-policy.fdi

how to set HAL properties on the ipod storage device to prevent the
volume manager to mount your device.
